I do not know much about NixOS. At least some of their development team works very hard on ARM devices. I flashed the Nix bootloader on the Pinebook Pro, so no matter what OS I am trying and failing at, it is booted curtesy of Nix. Their work on ARM firmware is first rate.

I've used Nix before, but as a standalone OS (as opposed to a package manager on another OS that the application Nix can provide), I wasn't impressed. I've never actually used Nix the package manager outside of Nix the OS before, though, which is really where Nix shines apparently. It's always been on my list, but never just quite gotten to the top.

Ive never used it as an OS so couldnt comment on the pluses/minuses of using it.
