Nor something I do very often but FFmpeg is what I typically use.

Ditto, although I do have handbrake installed on one box just because it is easier to "rip" dvd's so I can have a digital copy to view on all devices.

Ive tried VLC to do conversions but had a lot of problems.

I've only used VLC as a viewer and didn't even know it could convert files too :D I have found that I can do so much with Ffmpeg that I rarely try any other method. :)

I can't even REMEMBER what I used the last time I did video conversions. :D

Yeah, obviously I don't do that very often.
