I use gscan2pdf with the Tesseract OCR back end. It creates a good looking pdf, and is reliably text searchable. It is not however (text) editable if opened in a pdf editor. I am generally scanning in old tech documents or manuals. My goal is to have something readable and something that can be quickly found with common search tools.

Paperwork is the only one Ive ever tried but I dont use OCR tools very often.
