I have to admit I've been tempted to get one a few times, but honestly haven't a clue what I'd do with it...

Same here as i dont know what id do with it. Ive got Ivy Bridge systems that cost less than $50 with all parts that are far more useful, such as my USFFs.

I have a really old one that was given to me, I currently have Q4OS Pi version installed and it runs fine although it is incredibly slow with it's single core 700Mhz processor and 512Mb RAM but I have used it as a mqtt server for a couple of small projects I look into now and again and it does what I need it to do pretty well.
I have to say it it is more of a plaything than a serious piece of hardware and I don't really give it as much time as I probably could if I thought it could be capable of a bit more, maybe I will buy a newer one with the increased speed and ram at some stage which might (probably would) change the way I use it.
